It’s Easter Time! We all remember the song, “Hot Cross Buns”. Well, perhaps you need a quick recipe to make them. Well, here’s yet another one, however, this time, we’re going to give you our recipes. This recipe is inspired from AllRecipes.com, but with our flare. This has a little less sugar and carbs, and a little more fiber than the original.
This recipe should make enough to feed the whole family and all guests. We expect this recipe to be popular. You can half this recipe, except for the cooking times, for smaller families.
Equipment You Need:
- Large Mixing Bowls
- (2) 9 x 13 Inch baking sheets
- Oven
- Piping Bag
- Something to Separate Egg Yolks
- Baking Brush
- Option “a”: Bread Maker
- Option “b”: Stand Mixer w/ Dough Hook Attachment
Ingredients:
- 4 Eggs
- 1 1/2 Cup Water (warmed to 110 degrees)
- 2 Tablespoons Water (Room/Standard Faucet Temperature)
- 2 Tablespoons Active Dry Yeast
- 6 Tablespoons Butter
- 1 Tablespoon Stevia Sweetener or 1/2 Cup Monk Fruit Sweetener
- 1/2 Cup Monk Fruit Powdered Sweetener or 2 Teaspoons Powdered Stevia
- 6 Cups of Bobs Red Mill Low Carb All Purpose Baking Mix or similar Low Carb Flour equivalent
- 2 Tablespoons Cinnamon
- 4 Teaspoons Milk
- 2 Tablespoons Powdered Milk
- 1/2 Teaspoon Vanilla Extract
- 2/3 Teaspoons Salt
- (Optional) Raisins
Instructions:
- Take 2 egg and separate egg yolk and egg white. Keep both parts.
- Preheat oven to 375 degrees.
- Combine warm water, butter, 2 whole eggs, Baking Mix, 2 egg white, yeast, sweetener and salt in a bowl.
- If using Bread Maker, all ingredients can be put directly in. Set Bread Maker to “Dough” or similar function or program. Depending on size of bread maker, you’ll need to do this and the following steps in two batches.
- When using a Stand Mixer, put in yeast and warm water first. Allow this to sit for 5-7 minutes, and then add rest of ingredients into stand mixer bowl.
- Start mixing and add cinnamon and raisins if desired.
- Set to “Dough” program on break maker, or similar function. Within last 5 minutes of program, add cinnamon and raisins.
- Set mixing speed to low and use dough hook, to keep the dough down, until 10 minutes has passed. Add cinnamon and raisins and mix for 5 more minutes.
- Allow dough to double.
- Leave in bread maker until double.
- Grease a mixing bowl and place mixed dough in it. Cover with plastic and allow to double. This should take an hour.
- Flour surface of (2) baking sheets.
- Place dough on baking sheets and punch down.
- Cover baking sheets and let the dough rise in a warm area until dough has doubled again. This might take 35-40 minutes.
- Shape into 24 ball-shaped buns and line up in (2) 9 x 13″ baking sheets.
- Mix 2 egg yolks and room temperature water. Use baking brush to brush on the mixture.
- Place 2 baking sheets in oven and allow dough to bake for 25-35 minutes, until tops are golden brown.
- When done, place baking sheets somewhere to cool down, such as a baking rack.
- Combine powdered sweetener, vanilla, and milk. Put mix in piping bag. Pipe on buns.
Notes:
- To make this Vegan:
- Replace eggs in baking step with carbonated water or vinegar with baking soda. (If you have better replacements, please let us know in the comments.)
- Replace eggs in piping step with aquafaba, powdered egg replacement. applesauce or mashed banana.
- Replace butter with margarine or your favorite vegan alternative.
- Replace milk with equivalent dairy-free alternatives.
- Kosher for Passover Note: Save this one for after Passover, as this recipe uses yeast.
